Mint Chocolate Chip Brownies and Chocolate Orange Brownies

Hello again everyone and welcome to my second post of my baking blog!

This time I shall be instructing you in the making of two different flavours of brownie, using the same basic chocolate brownie recipe but each with some added yumminess.

I doubled this recipe and made one batch of each flavour.

So lets begin…

Ingredients:                                                For the Mint Choc Chip: 

185g soft margarine                                      100g Aero bubble bar

185g plain/dark chocolate                             1tsp peppermint extract

85g plain flour

40g cocoa powder                                        For the Choc Orange:

3 eggs                                                          Juice and rind of one orange

275g caster sugar                                        100g chopped plain/milk chocolate


Here is the method…

1.First of pre-heat the oven to 180°C/gas 4 and line a 20cm square tin with baking paper (cutting out tabs for each corner, making it easier to remove from the tin once cooked).

2.Next, cut the soft margarine into a medium sized glass bowl and break the plain chocolate into the bowl. Place the bowl over a pan of boiling water (ensuring the water isn’t touching the bowl, otherwise it will burn), place on a low heat and stir until fully melted. Then leave to cool off the heat.


3.Sieve the flour and cocoa powder into a mixing bowl and put aside. Then begin to chop up the aero and plain chocolate into chunks, placing in separate bowls.

4.Then grate the orange to remove the rind, avoiding the white of the orange and place aside. Cut the orange in half and juice into a bowl and also place aside.


5.Break the eggs into another mixing bowl and add the caster sugar, using an electric hand mixer whisk until it reaches a thick and creamy consistency. It will double in volume and become very pale.

6.Pour the cooled chocolate mixture into the egg mixture and fold in using a spatula, by drawing a figure of eight pattern through the mixture (take your time with this, as if you over-mix all of the air brought into the mix from the whisking will be undone).

7.Re-sieve the flour and cocoa into the chocolate mixture and gently fold in (this will take a little while to incorporate, but be patient!).


8.Now the basic brownie mixture is complete and feel free to stop here and begin baking.

Alternatively you can try these two different flavours. For the mint chocolate chip ones, fold in the Aero and the peppermint extract or for the chocolate orange ones, fold in the orange rind and juice and then the chocolate chunks.

9.Then pour the mixture(s) in the tin(s) and bake for 25 minutes, after this time check the brownies and if it wobbles when the tin is gently shaken then it needs more time. After this time, the baking time is up to you! It really depends how gooey or cakey you want your brownies, just as long as the top is shiny and papery and the sides have slightly moved away from the tin.

10.Leave in the tin on a cooling rack, once cool remove from the tin using a palette knife and cut into squares, the size of them is up to you!
