So yesterday was a double baking sort of day, sticky toffee pudding for a date night and some salted caramel brownies just for good measure. This brownies are rich, gooey and have salted caramel swirled within them.
200g soft spread
100g dark chocolate, 70% cocoa solids (I used 82%, as this is all I could find)
100g dark chocolate, 50% cocoa solids
1 tsp flaky sea salt, plus an extra sprinkle for the top
200g caster sugar
4 eggs, at room temperature (if they are in the fridge, you risk the mixture curdling)
130g plain flour
50g cocoa powder
397g can of caramel
1.Preheat the oven to 180°C/gas mark 4. Grease and line a 22cm tin with greaseproof paper.
2.In a medium sized saucepan, melt the soft spread. Break up the chocolate, place into a mixing bowl and pour the soft spread over the top. Leave the chocolate to melt.
3. In another bowl, mix 175g of the caramel with sea salt.
4. Place the rest of the caramel in a large mixing bowl with the caster sugar and eggs. Use an electric hand mixer to whisk until soft and fluffy.
5. Stir the chocolate mixture, to ensure all the chocolate has melted (if it hasn’t pop in the microwave to melt all the chocolate pieces) and make sure it has cooled slightly. Then gently stir the chocolate mixture into the sugar mixture.
6.In another mixing bowl, sieve the flour and cocoa powder together and a pinch of table salt. Carefully fold this into the chocolate mixture.
7.Spread half the brownie mixture into the prepared tin and put 3/4 of the remaining caramel on top in 5 lines with a teaspoon.
8.Pour the remaining brownie mixture over the top and then drizzle the caramel over the top of the brownie. Use a skewer to mix it with the brownie mixture and leave a marbled effect.
9.Scatter with more sea salt and bake for 35-40 minutes or until risen and with a firm crust on the top. The brownie should jiggle slightly when you shake the tin (this will mean your brownies will be a little gooey). Leave to cool in the tin and cut into squares.
These brownies are really yummy and delicious warm with ice cream 🙂
