Fudge-nut squares

Hi again everyone,

As it is Friday, I thought I could not possibly just make one thing…so here is my second bake, fudge-nut squares. These treats have a shortbread like bottom and are covered in a fudge and walnut topping. They are super easy to make and really delicious!

Makes approximately 20 bars

150g soft spread

250g plain flour

75g caster sugar

150g milk chocolate

40g soft spread

397g can of condensed milk

50g chopped walnuts or pecans

1.Preheat the oven to 160°C/Gas mark 3. Grease and line a 28 x 18cm shallow baking tin.

2.Put the soft spread and sieved flour into a bowl, using your fingers rub the soft spread into the flour until it resembles fine breadcrumbs. Stir in the sugar and mix again.

3.Continue to work the mixture until it forms a smooth mixture.

4.Transfer to the prepared tin and spread out evenly using the back of a metal spoon. Prick the mixture with a fork and bake for 35-40 minutes or until lightly brown. Transfer to a wire rack.

5.To make the filling: measure the chocolate, soft spread and condensed milk into a medium sized saucepan. Heat gently until the chocolate and soft spread have melted. Turn the heat up and cook for 3-5 minutes, stirring continuously until the mixture starts to thicken.

6.Stir in the nuts and pour on top of the shortbread base.

7.Leave to cool and then chill for 2 hours, until firm.

8.Cut into squares and enjoy!
