Victoria Sponge

Welcome back to my baking blog.

This is one of the easiest and most delicious cake recipes you can make. It is an all-in-one recipe which is bond to please. This one is filled with vanilla double cream and strawberry jam.

Ingredients:

Cake

225g soft spread

225g caster sugar

225g SR flour

4 large eggs

1tsp baking powder

Filling 

250ml double cream

1tsp vanilla extract

Strawberry/Raspberry jam

 

Method:

1.Preheat the oven to 180°C/Gas mark 4. Grease and line 2 8in loose bottom sandwich round tins.

2.Mix all the cake ingredients in a large mixing bowl using an electric hand whisk until smooth and well combined.

3.Separate the mixture between the 2 cake tins.

4.Bake in the preheated oven on the middle shelf for 25-30 minutes or until well risen and a skewer comes out clean.

5.Leave to cool on a wire rack.

6.Measure the cream and vanilla into a jug and transfer into a large mixing bowl. Use the electric hand mixer to whisk until forms soft peaks.

7.Once the cake is cool, place onto a cake board and spread with the whipped cream. Then dollop the jam over the top of the other cake and and smooth over with a knife.

8.Sandwich the other cake on top and sprinkle with caster sugar.
