Victoria Sponge

Welcome back to my baking blog.

This is one of the easiest and most delicious cake recipes you can make. It is an all-in-one recipe which will definitely be a crowd pleaser. This one is filled with vanilla buttercream and strawberry jam.

Ingredients:

Cake

225g soft spread

225g caster sugar

225g SR flour

4 large eggs

1tsp baking powder

Filling 

50g soft spread

175g icing sugar, sieved

1tsp vanilla extract

1 tbsp semi-skimmed milk

2-3 tbsp Strawberry jam

To top

Caster sugar, to sprinkle

Method:

1.Preheat the oven to 180°C/Gas mark 4. Grease and line 2 8in loose bottom sandwich round tins.

2.Mix all the cake ingredients in a large mixing bowl using an electric hand whisk until smooth and well combined.

3.Separate the mixture between the 2 cake tins.

4.Bake in the preheated oven on the middle shelf for 25-30 minutes or until well risen and a skewer comes out clean.

5.Leave to cool on a wire rack.

6.Measure the soft spread, icing sugar, milk and vanilla into a mixing bowl and mix until smooth and creamy. Set aside.

7.Once the cake is cool, place onto a cake board and spread with the buttercream. Then smooth a few tablespoons of jam onto the other cake and smooth over with a knife.

8.Sandwich the other cake on top and sprinkle with caster sugar.
