So I am back home in Oxfordshire now and already back to baking as per usual. This recipe is a super simple all-in-one which makes a light and spongy pudding with a soft gooey centre. I drenched mine in custard, but you can serve it will single or double whipped cream or ice cream.
125g soft spread
125g caster sugar
175g SR flour, sieved
1tsp baking powder
2tbsp cocoa powder
1.Grease a 850ml pie dish with butter. Preheat the oven to 180 °C/gas mark 4.
2.Measure all ingredients into a large mixing bowl, ensuring to sieve all the dry ingredients.
3.Mix well with a wooden spoon or an electric hand mixer.
4.Transfer into the prepared dish and bake for 40-50 minutes or until crisp and a skewer comes out clean.
5.Serve immediately with custard, cream or ice cream.
