Blueberry Muffins

Hi everyone and welcome back…

So this time I made delicious blueberry muffins. I realise I haven’t put up a muffin recipe in a very very long time, so consider this part 1 of 2 on the muffin baking for the weekend 🙂

Makes 12


110g soft spread/butter

250g plain flour

250g caster sugar

2 medium sized eggs

125ml milk

2tsp baking powder

1/2 tsp salt

150g blueberries



1.Preheat the oven to 180°C/gas mark 4. Line a 12 hole muffin tin with cases.

2.Sieve the flour, baking powder and salt together in a large mixing bowl.


3.In a separate bowl cream the butter and sugar with an electric hand mixer.


4.In a jug, crack the eggs and whisk lightly with a fork. Add to the creamy mixture.

5.Add in the milk and the flour mixture and beat until combined.


6.Stir in the blueberries carefully and fill the cases 2/3 full.


7.Place in the preheated oven and bake for 25-30 minutes or until well risen, golden and a skewer comes out clean.
