Triple Chocolate Chip Muffins

Hi again everyone,

So this is round 2 of the muffin baking for this weekend. This time triple chocolate chip muffins, this is cocoa powder, milk chocolate chips and white chocolate chips all rolled into one muffin.

Makes 12


250g SR flour

1tsp vanilla extract

175g caster sugar

1 large egg

250ml milk

2tsp baking powder

90ml vegetable oil

2tbsp cocoa powder

100g white chocolate chips

50g milk chocolate chips



1.Preheat the oven to 200°C/gas mark 6. Line a 12 hole muffin tin with cases.

2.Sieve all the dry ingredients into a large mixing bowl (except the milk chocolate chips!).


3.Combine all wet ingredients into a jug.


4.Pour wet ingredients into dry ingredients and stir lightly (don’t overmix, it will be lumpy!).


5.Spoon evenly into muffin cases and sprinkle milk chocolate chips on the top.


6.Bake in the preheated oven for 20-25 minutes or until well risen, springy and a skewer comes out clean.
