So this time I am bringing you another delicious brownie recipe, but this time filled with chopped rolos and topped with whole rolos. These are perfect on their own or warmed with ice cream.
Makes 20 brownies.
200g soft spread/unsalted butter
200g plain/dark chocolate
125g light brown sugar
125g caster sugar
1tsp vanilla extract
125g plain flour
1tbsp cocoa powder
1tsp sea salt flakes
126g bag Rolos
1.Preheat the oven to 170°C/gas mark 3 1/2. Grease and line a rectangle cake tin with greaseproof paper.
2.Melt the soft spread and plain chocolate in a medium sized saucepan over a low heat, leave to cool.
3.In another bowl, beat together using an electric hand mixer (or by hand using a whisk) the sugars, eggs and vanilla extract until pale and fluffy.
4.Stir in the cooled melted chocolate mixture and then sift the flour, cocoa and sea salt into the mixture.
5.Chop half the rolos into quarter and add into the batter, stirring until fully combined.
6.Transfer into the prepared tin and push the remaining rolos into the surface of the batter. Cook in the preheated oven for 25-30 minutes or until it is firm to the touch but still gooey in the middle (they continue to cook whilst cooling).
7.Leave in the tin to completely cool, then cut into squares and enjoy hot or cold 🙂
