It has been a long time since I last posted a recipe on here, so here is a new one for you all: cheese and chive muffins. These muffins are really delicious, especially served fresh and warm. Enjoy!
255g plain flour
3 tsp baking powder
1/2 tsp salt
3 tbsp granulated sugar
85g cheddar cheese, grated
85g butter, melted
1tsp dried chives
1.Preheat the oven to 200°C/gas mark 6. Line a 12 hole muffin tin with muffin cases.
2.In a mixing bowl, sieve together the flour, baking powder, salt, sugar, cheese and dried chives.
3.In a jug, measure the milk and whisk with the egg. Stir in the melted butter.
4.Pour all of the wet ingredients into the dry ingredients and stir until combined. The batter will be lumpy, don’t over-stir.
5.Spoon into the muffin tins, sprinkle extra cheese on top and place into the middle shelf of the oven. Bake for 20-25 minutes, until the tops are brown and spring back when pressed (I made both chocolate and cheese, see my other post for the chocolate muffin recipe).
6.Leave to cool and remove from muffin tin.
