Salted Caramels

Hi everyone,

Here is a quick and easy recipe for chewy salted caramels, which make the perfect gift for Christmas or just to enjoy as a little treat this time of year.

Makes 36 caramels


397g condensed milk

100g unsalted butter

100g light brown soft sugar

1 1/2tbsp golden syrup

1/2tsp vanilla extract

1/2tsp fine sea salt

Extra sea salt flakes, to sprinkle



1.Grease and line a 20cm square tin with greaseproof paper.

2.In a medium sized saucepan on a low heat, melt the condensed milk, butter, sugar and syrup whisking until the sugar dissolves and the butter melts.

3.Turn up the heat and bring the mixture to the boil, continuing to whisk to prevent it sticking to the pan. Boil for 8 minutes – you are looking for a golden caramel colour.

4.Quickly whisk in the vanilla and salt and pour into the prepared tin. Ensure the mixture is even in the tin and sprinkle with the extra sea salt.

5.Leave to cool and set a room temperature for at least 4 hours or overnight. Cut into small pieces – you can then wrap them in sweet wrappers or in small squares of greaseproof paper.
