Here is a simple cookie recipe which can be adapted to make so many different flavoured cookies. I decided to make 3 different varieties which are all as delicious as each other 🙂
Makes 22 cookies
170g light brown sugar
2tbsp golden syrup
255g SR flour
2tbsp smooth peanut butter
50g white chocolate chips
100g chocolate m&ms
50g milk chocolate chips
1.Preheat the oven to gas mark 4/180°C. Line 3 baking trays with greaseproof paper.
2.Combine the butter, sugar and syrup in a large mixing bowl and whisk with an electric hand mixer until smooth.
3.Sieve over the flour and whisk again until smooth.
4.Split the dough evenly between 3 bowls. In one bowl add the peanut butter and white chocolate chips and stir. In another bowl add the M&Ms and stir. In the last bowl add the milk chocolate chips.
5.Spoon out the 3 different doughs onto the 3 separate baking trays. With the milk chocolate chip mixture, cover 4 oreos with the dough (so none of the oreo can be seen).
6.Place in the middle of the oven and cook for 10-12 minutes or until the cookies have risen and are lightly browned.
7.Place onto a wire rack and leave to cool, then store in an airtight container.
