Chocolate cake

Hi everyone and welcome back…

This recipe is perfect as a celebration cake, its really rich and incredibly delicious (well I’ve been told that anyway!). It is a simple all in one chocolate cake mixture sandwiched together with an Oreo buttercream and topped with a glossy chocolate ganache and yummy Milkybar giant buttons. Hope you enjoy…

2tbsp cocoa powder

3tbsp boiling water

225g soft margarine

225g caster sugar

4 medium sized eggs

225g SR flour, sieved

2tsp baking powder, sieved

Oreo buttercream

50g soft margarine

175g icing sugar, sieved

1tbsp milk

5 oreos, crushed in a sandwich bag

Ganache and decoration

250g dark chocolate, chopped finely

235ml double cream

1 packet of Milkybar giant chocolate buttons

1.Preheat the oven to gas mark 4/180°C. Grease and line two 20cm loose bottom round cake tins with greaseproof paper circles.

2.Combine the cocoa powder and water in a small bowl and stir.

3.In a large mixing bowl, weigh out the rest of the cake ingredients and use an electric hand mixer/wooden spoon to mix thoroughly. Add in the cocoa powder mixture and stir.

4. Separate cake mixture evenly into the cake tins. Place on the middle shelf in the oven and cook for 20-25 minutes or until well risen and a skewer comes out clean.

5.Leave to cool on a wire rack. In the meantime make the buttercream, combine all the ingredients in a small bowl and set aside.

6.Once the cake is cool, remove from the tins and place on a plate/cake board. Spread the buttercream onto one of the cake and sandwich the other on top.

7. To make the ganache, heat the double cream in a small pan until just reaches the boil (bubbles will form) and whisk in the chocolate until smooth. Set aside to cool slightly.

8.Pour the ganache over the cake and decorate however you like!

Keep in an airtight container and enjoy 🙂
