Honeycomb Rocky Road

Hi everyone,

Here is a really simple rocky road recipe with a slight twist – the addition of honeycomb pieces. I got my honeycomb pieces from Aldi, but you could always use a couple of bars of crunchies or make your own! Hope you all really enjoy this recipe 🙂

Makes 16 squares


250g dark or milk chocolate

100g soft spread/unsalted butter

2tbp golden syrup

200g digestive biscuits

50g mini marshmallows

60g honeycomb pieces



1.Line a square 20cm baking tin with greaseproof paper.

2.Melt the chocolate, butter and golden syrup in a pyrex bowl over a pan of simmering water (ensure the water doesn’t touch the bowl). Heat until completely melted and set aside to cool slightly.


3.Place the biscuits into a food bag and crush using a rolling pin into chunks.

4.Mix the biscuits with the marshmallows and honeycomb pieces in a large mixing bowl.


5. Add in the chocolate mixture and stir well. Tip into the prepared tin and spread evenly in the tin. Place into the freezer until set.


6.Cut into squares and keep in an airtight container in the fridge.
