Peanut Butter Chocolate Cake

Welcome back everyone…

So last week was my best friend’s birthday and she kinda loves peanut butter and Reeses, so I decided to bake a chocolate cake sandwiched together with smooth peanut butter, chocolate buttercream and topped with more buttercream, Reeses pieces and Reeses peanut butter cups. This cake is light and suits the rich icing and the sweet peanut butter treats! I hope you enjoy this as much as I do ūüôā



2tbsp cocoa powder

3tbsp boiling water

225g soft margarine

225g caster sugar

4 medium sized eggs

225g SR flour, sieved

2tsp baking powder, sieved


88g dark chocolate

113g soft spread/unsalted butter

1tbsp semi-skimmed milk

1/2tsp vanilla extract

125g icing sugar

Filling and decorations 

2tbsp smooth peanut butter

1 packet of reeses pieces

4 peanut butter cups, cut in half


1.Preheat the oven to gas mark 4/180¬įC.¬†Grease and line two 20cm loose bottom round cake tins with greaseproof paper circles.

2.Combine the cocoa powder and water in a small bowl and stir. Leave to cool slightly.

3.In a large mixing bowl, weigh out the rest of the cake ingredients and use an electric hand mixer/wooden spoon to mix thoroughly. Add in the cocoa powder mixture and stir.


4. Separate cake mixture evenly into the cake tins. Place on the middle shelf in the oven and cook for 20-25 minutes or until well risen and a skewer comes out clean. Leave to cool on a wire rack, once cool carefully remove from the tins and remove the greaseproof paper circles.

5.In the meantime make the buttercream, melt the chocolate in the microwave and leave to cool slightly. In a large mixing bowl combine the soft spread, milk, vanilla and icing sugar until smooth (several minutes with an electric hand mixer or by hand using a whisk) until smooth and creamy and add in the chocolate. If too thin add more icing sugar and whisk again.

6. Place one of the cakes onto a cake board/plate and spread with peanut butter. Spread half the buttercream onto the other cake and sandwich together.

7.Top with the remaining buttercream and decorate with the Reeses pieces and peanut butter cups. Store in an airtight container.
